      <description>&lt;p&gt;안녕하세요. 혹시 식품첨가물중에&amp;nbsp;잔탄검이라는 물질에 대해 들어보셨나요?&amp;nbsp;&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;제가 이전 포스팅에서는 완전식품에 대한 포스팅을 하였는데요. 이번 포스팅에서는 원료부분에 대해서 알아보는 시간을&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;가져보도록 하겠습니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;오늘은 잔탐검의 특징에 대해서 알아보는 시간을 가져볼건데요.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;잔탄검은 대부분 식품첨가물로써 증점제의 역할과 안정제 그리고 분산제 등으로 사용되고 있습니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;주스와 음료 이외 소스나 요구르트와 같은 유제품에도 들어가는 것이 바로 잔탄검인데요.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;잔탄검은 탄수화물을 배양하고 발효시켜서 얻은 고분자다당류검물질을 이소프로필알콜에 정제하고 건조, 및 분쇄한 것&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;으로 포도당, 만노스 및 글루쿠론산의 나트륨, 칼륨과 칼슘염 등으로 구성되어 있는 혼합물입니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;증점제로 사용되는 잔탄검은 구아검과 젤란검, 펙틴과 같은 다른 종류도 있으며 자연 상태에서도 존재하지만 원료 및&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;식품첨가물로 사용되어지고 있습니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;더 덧붙이면 카라기난 , 한천, 젤리의 종류가 있으며&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;물과 같이 흐르는 제재에 증점에를 첨가하여 천천히 흐르게 하는 점도를 부여해주어 편의성을 높이거나&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;너무 묽게 보이는 원료를 진한 느낌으로 보여주기 위해 사용하고 있습니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;구아검이나 잔탄검은 검류의 종류에 따라서 가격, 품질, 투명도, 점도가 잡히는 시간이 전부 다릅니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;검류를 사용할 때에는 설탕, 덱스트린, 포도당과 같이 혼합을 하고 천천히 혼합을 해주어야 건더기 같은 성분들이 보이지&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;않게 됩니다. 이런 검류들을 사용을 했을 때 바로 투여를 하게된다면 확인했을 때 달라진것을 확인하기 힘들지만&amp;nbsp;&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;검류는 사실 35도 이상에서만 녹여주어야 하고 점도를 얼마나 가지는 지는 냉각이 다 이루어져야 확인이 가능합니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;일반적으로 3시간에서 4시간 정도는 냉장에서 또는 상온에서 냉각을 시켜주어야 하는데&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;주의할 점으로는 너무 빠르게 냉각을 시킬 경우에는 결로가 생길 수 있고 수분이 빠져서 층 분리가 생길수가 있습니다.&amp;nbsp;&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;식품첨가물 잔탄검에 대해서 간단하게 알아보는 시간을 가져보았는데요.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;앞으로도 증점제 , 안정제 등에 대한 식품첨가물 원료에 대해서도 정보를 많이 나누는 시간을 가져보도록 하겠습니다.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;내가 먹는 식품에 대해서 알고 먹는것과 모르고 먹는것은 확실히 다를 수 있기 때문에 시중에 있는 제품들을 보고&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;/p&gt;&lt;p&gt;&quot;아 이 제품은 어떻게 만들어졌을지&quot;
